Black Bean Soup

Ingredients
  

  • 2 cans (15 oz each) Black Beans drained and rinsed
  • 1 Onion, chopped
  • 2 2 cloves garlic, minced
  • 1 Red Bell Pepper (diced)
  • 1 Jalapeño Pepper (seeded and minced)
  • 1 tbsp Cumin
  • 1 tbsp Chili Powder
  • 4 cups Vegetable Broth
  • Juice of lime
  • Salt and pepper to taste

Instructions
 

  • 1. In a large pot, sauté onions, garlic, red bell pepper, and jalapeño until softened.
  • Add black beans, cumin, chili powder, and vegetable broth. Simmer for 20 minutes.
  • Use an immersion blender to blend some of the soup, leaving it partially chunky.
  • Stir in lime juice, salt, and pepper. Simmer for an additional 5 minutes.
  • Serve hot.
