Black Beans drained and rinsed

Onion, chopped
2
2 cloves garlic, minced

Red Bell Pepper (diced)
1
Jalapeño Pepper (seeded and minced)

Cumin

Vegetable Broth
Juice of lime
Salt and pepper to taste
Instructions
1. In a large pot, sauté onions, garlic, red bell pepper, and jalapeño until softened.
Add black beans, cumin, chili powder, and vegetable broth. Simmer for 20 minutes.
Use an immersion blender to blend some of the soup, leaving it partially chunky.
Stir in lime juice, salt, and pepper. Simmer for an additional 5 minutes.
Serve hot.
