- 4 whole-grain or spinach tortillas
- 1 cup hummus
- 1 cup mixed greens e.g., spinach, arugula
- 1 cucumber thinly sliced
- 1 red bell pepper thinly sliced
- 1/2 red onion thinly sliced
- 1 carrot thinly sliced into strips
- Salt and pepper to taste
